Roast Beef with Creamy Mushroom Sauce

  • 1 roast beef, or ribeye, cleaned (2 to 3 kg)
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup bacon, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/4 cups white onion, finely chopped
  • 2 cups cremini mushroom, sliced
  • 1/2 cups white wine
  • 1/4 cups beef broth
  • 1/4 cups evaporated milk
  • 1 1/2 cups table cream
  • 1 tablespoon thyme
  • 1 pinch salt
  • 1 pinch pepper

  • Preheat the oven to 200°C.
  • Place the roast beef on a baking tray and season with salt and pepper.
  • Heat your T-fal® Hard Titanium+ skillet over medium heat; when the red spot (Thermo-spot) is completely red, sear the roast beef on all sides until golden brown. Return the roast beef to a baking tray and cover with aluminum foil, bake for 40 minutes or until well cooked.
  • In the same skillet, add the bacon, cook until browned, add the garlic, white onion, mushrooms, white wine, beef broth, evaporated milk, and half-and-half, season with thyme, salt, and white pepper to taste.
  • Remove the roast beef from the oven and let it rest so it doesn't lose its juices; on a cutting board, slice the roast beef thinly and serve on a plate with the creamy mushroom sauce.
