Roast Beef with Radish Sauce

This recipe for preparing roast beef is very simple. It is accompanied by a cream sauce with radishes.

1 kilo roast beef, tied with cooking twine
2 tablespoons vegetable oil
6 onions, halved and cut
1 cup sour cream
1/4 cups radish, peeled and chopped
1 tablespoon lime juice

Preheat the oven to 190° C.
Season the meat with salt and pepper.
Heat the oil in a large oven-proof skillet.
Add the piece of meat (tied with cooking twine), and let it brown on all sides. It should take about 5 minutes in total.
Remove from heat and set aside.
Place the halved green onions cut side down in the skillet.
Place the skillet in the oven and cook until the meat registers 60° C with a thermometer inserted in the center, about 35-40 minutes.
Transfer the meat to a rack and cover with aluminum foil. Let it rest for 10 minutes before slicing.
Set aside the onion.
Mix the cream with the finely chopped radish, lemon juice, and 1/4 teaspoon of salt. Season with pepper.
Serve the sliced roast beef thinly and accompanied by the radish sauce.
