Sonoran Pork Shank

Baked shank, very easy to prepare and economical. A dish with a lot of flavor as it is cooked with a chili paste that gives it a unique touch. Be sure to try it.

  • 2 meat shank, pork
  • 3 cascabel chiles
  • 3 guajillo chiles
  • 1 pasilla chile
  • 1 tablespoon vinegar
  • 3 cloves garlic
  • salt
  • 1/8 tablespoons parsley
  • 250 grams new potatoes, for garnish
  • 250 grams scallion, parboiled, for garnish
  • 200 grams button mushrooms, for garnish

  • Preheat the oven to 180°C.
  • Boil the chiles in a pot until soft.
  • Blend the chiles, garlic, and parsley until you have a thick paste.
  • On a sheet of aluminum foil, spread the chili paste evenly over the shank. Wrap it tightly to ensure it is well sealed.
  • Bake for 2 hours.
  • Unwrap the shanks and place them in a baking dish with the onions, mushrooms, and baby potatoes.
  • Bake for 30 more minutes. Serve.
