2 meat shank, pork
3 cascabel chiles
3 guajillo chiles
1 pasilla chile
1 tablespoon vinegar
3 cloves garlic
salt
1/8 tablespoons parsley
250 grams new potatoes, for garnish
250 grams scallion, parboiled, for garnish
200 grams button mushrooms, for garnish

Preheat the oven to 180°C.
Boil the chiles in a pot until soft.
Blend the chiles, garlic, and parsley until you have a thick paste.
On a sheet of aluminum foil, spread the chili paste evenly over the shank. Wrap it tightly to ensure it is well sealed.
Bake for 2 hours.
Unwrap the shanks and place them in a baking dish with the onions, mushrooms, and baby potatoes.
Bake for 30 more minutes. Serve.
