Spaghetti with Chicken and Corn

  • 90 grams butter
  • 1 chicken breast, cut into small cubes
  • 1 onion, cut into small cubes
  • 2 cloves garlic, finely chopped
  • 1 cup corn kernels
  • 1 Poblano chile, cut into strips
  • 1 bell pepper, cut into strips
  • 500 milliliters sour cream
  • 500 grams spaghetti, cooked
  • 1 cup Manchego cheese, grated
  • salt and pepper

  • In a pan, add butter and brown the chicken.
  • Add salt and pepper to taste, when browned add the onion, garlic, corn, and chopped chilies. Mix until all the vegetables are cooked.
  • Pour the cream and mix.
  • Add the spaghetti and mix until everything is combined.
  • Add the manchego cheese and let it rest until melted. Remove from heat and serve.
