2 ribs, rib racks
2 1/2 teaspoons brown sugar
1 1/4 teaspoons instant coffee
1 1/4 teaspoons kosher salt
1 1/4 teaspoons garlic powder
1 1/4 teaspoons ground cilantro
3/4 teaspoons ground black pepper
1/4 teaspoons cocoa powder
1 teaspoon vegetable oil
1 1/2 cups dry red wine

Arrange the rib racks in a baking tray with edges or inside a large roasting pan.
Using a knife, remove the membranes from the bone side of the ribs (this step is very important for the ribs to turn out tender).
Pat the ribs dry with a paper towel; arrange on the grill with the meat side up.
Combine the sugar, coffee granules, salt, garlic powder, cilantro, pepper, and cocoa in the spice grinder; cover and process until smooth.
Lightly rub the ribs with oil.
Sprinkle with the mixture, pressing gently to help it adhere to the ribs.
Let sit at room temperature for no more than 1 hour.
Preheat the oven to 250 F. Pour the beer into the bottom of the baking tray.
Cover the dish with aluminum foil, bake for 4 to 5 hours (this will be enough for the meat to become tender, but it won’t fall off the bones).
Preheat the broiler. Grill the ribs over medium heat, turning them once, for 5 minutes.
