  • 6 tomatoes
  • 5 guajillo chiles
  • 5 árbol chiles
  • 1 cup chipotle chile in adobo sauce
  • 1 cup sour cream
  • 1 clove garlic
  • 2 tablespoons vegetable oil
  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1 cup new potatoes, cooked and cut in halves
  • salt and pepper
  • white rice, for accompaniment
  • parsley, for garnish

  • In a pot with hot water, cook the tomatoes, guajillo pepper, and árbol pepper for 20 minutes, drain, and set aside.
  • Blend the above with the chipotle, cream, and garlic.
  • In a skillet over medium heat, heat the oil and sear the chicken pieces. Once browned, pour in the sauce, season with salt and pepper, let it come to a boil, and cook on low heat for 25 minutes or until the chicken is cooked through.
  • Add the potatoes, cook for 5 more minutes, and serve hot, garnished with parsley and accompanied by rice and tortillas.
