Spinach and Cheese Stuffed Chicken Breasts

These delicious chicken breasts are filled with a mixture of spinach, cream cheese, and mushrooms. Everything is covered in a white wine sauce. Very tasty!

  • 4 chicken breasts, very thinly flattened (ask for them like this at the supermarket)
  • 1 package frozen spinach
  • 2 tablespoons butter
  • 12 button mushrooms, finely chopped
  • 2 cloves garlic
  • 1 shallot, cut into quarters

  • 1 cup cream cheese, or ricotta cheese
  • 1/2 cups Parmesan cheese, grated
  • 1/2 teaspoons nutmeg
  • 2 tablespoons olive oil
  • 2 tablespoons butter, for the sauce
  • 2 tablespoons flour, for the sauce
  • 1/2 cups white wine, for the sauce
  • 1 cup chicken broth

  • Thaw the spinach in the microwave and place it on a paper towel. Squeeze well to remove all the water from the spinach. Place in a medium bowl.
  • Put the butter in a very hot skillet and add the mushrooms, garlic, and shallots. Season with salt and pepper and cook for about 5 minutes, until the mushrooms release their juice. Place the mushrooms, garlic, and shallots in the food processor. Pulse to finely chop everything and add to the bowl with the spinach.
  • Add the cream cheese (or ricotta cheese) and the parmesan cheese. Add the nutmeg and a little salt and pepper. Mix well.
  • Stuff the chicken breasts with the mixture prepared in the previous step and secure with a toothpick.
  • Put 3 tablespoons of oil in the skillet and add the stuffed chicken breasts to brown them on all sides. Cook the chicken for 10-12 minutes (it should cook quickly since it is so thin).
  • Remove the chicken breasts and add the butter to the skillet. When melted, add the flour and mix well. Using a whisk, add the white wine until it reduces for another minute. Gradually add the chicken broth and return the chicken breasts to the skillet. Reduce the heat and keep in the skillet until ready to serve.
