  • 1 kilo beef tenderloin, whole, USMEF®
  • 1 cup bacon, fried, diced
  • 1 1/2 cups sour cream
  • 1/2 cups chipotle chile
  • 3/4 cups beef broth
  • salt
  • pepper
  • 3 tablespoons olive oil

  • Cut the USMEF® beef steak into medium medallions of approximately 200 grams. Season with salt and pepper on both sides and set aside.
  • Blend the bacon with sour cream, chipotle, and beef broth until you achieve a uniform mixture.
  • In a hot saucepan, pour in the blended mixture, season with salt and pepper, and cook over low heat for 8 minutes or until the sauce begins to thicken. Keep warm.
  • In a skillet with enough olive oil, cook the USMEF® quality beef medallions on both sides for 12 minutes over medium heat or until the desired doneness is achieved.
