Steak with Mushroom and Guajillo Sauce

This steak recipe is excellent for a dinner with many people. It is very simple to prepare and tastes spectacular. The secret ingredient in this recipe is dark beer, which gives it a surprising flavor.

  • 1 fish steak, whole and cleaned from the center
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1/2 kilos button mushrooms, sliced
  • 1/2 kilos new potatoes, cooked and peeled
  • 8 guajillo chiles, fried in oil, cleaned and soaked in boiling water
  • 2 pasilla chiles, cold, cleaned without seeds and soaked along with the guajillo
  • 1 teaspoon fresh thyme
  • 1 bottle ale beer
  • salt , to taste
  • pepper, to taste

  • Clean the steak and dry it with a kitchen towel. Sprinkle with coarse salt and freshly ground pepper.
  • Heat oil in a large skillet and sear the steak.
  • Sauté the onion for a few minutes and add the garlic. Add the chiles, thyme, and beer. Let everything cook until the chiles and onion are cooked. Put everything in the blender and blend (strain if necessary).
  • Sauté the mushrooms for a few minutes until they release almost all the liquid, add the potatoes and ground chili. Season with salt and pepper.
  • Place the steak in a baking dish, add some of the chili sauce, and bake until almost done. Remove from the oven and let rest for 10 minutes so the juices don’t escape (note: the meat will continue cooking, so it's important to take it out a little early).
  • Slice and place on a platter with the sauce on top and the mushrooms and potatoes around.
