40 grams tomato, roasted and drained
1/4 cups fresh rosemary, chopped
4 chicken breasts
4 slices panela cheese
salt
pepper
olive oil, as needed

In a bowl, mix the roasted and chopped tomato with a tablespoon of rosemary.
Using a sharp knife, make a pocket in each breast and season with salt and pepper inside and out.
Each breast is filled with a quarter of the prepared tomato and a slice of panela cheese.
The opening is closed with a toothpick.
They are drizzled with olive oil and sprinkled with rosemary.
In a skillet, heat olive oil and fry on both sides until golden and cooked through, with the skillet covered.
Serve accompanied with a salad.
