  • 1 cup nopal, cut into strips and cooked

  • 3 cloves garlic, chopped, for sauce
  • 1 white onion, cut into eighths, for sauce

  • 4 guajillo chiles, for sauce
  • 1 tablespoon allspice berry, for sauce
  • 1 cup chicken broth, for sauce

  • For the filling, heat a pan over medium heat with the oil, cook the onion with the nopales until they stop releasing slime, season to your liking with salt, pepper, and oregano. Set aside.
  • On a cutting board, place the chicken breasts, fill with the nopales and Oaxaca cheese, roll them up, season with salt, pepper, and a little oregano. If necessary, secure with a toothpick.
  • Heat a grill over high heat and cook the chicken rolls until well done. Cut the rolls and keep warm.
  • For the sauce, heat a pan over medium heat with the oil, cook the garlic with the onion until you achieve a golden color, add the tomato, cilantro, guajillo pepper, allspice, and coriander seeds. Cook for 10 minutes and fill with the chicken broth, season with salt and continue cooking for another 10 minutes. Cool slightly.
  • Blend the sauce until you obtain a homogeneous mixture. Serve on a plate as a mirror, place the chicken on top and enjoy.
