Enjoy this spectacular pork loin stuffed with fruit, covered in a rub that adds extra flavor and accompanied by a tamarind sauce. It’s the perfect dish for any celebration!
2 tablespoons McCormick® pepper salt, for the meat
2 tablespoons McCormick® garlic powder, for the meat
2 tablespoons paprika McCormick®, for the meat
1 tablespoon raw sugar, for the meat
3 kilos pork loin, opened like a book
2 tablespoons vegetable oil, for the sauce
3 dried chipotle chile, for the sauce
2 árbol chiles, for the sauce
4 cloves garlic, for the sauce
1/4 onions, for the sauce
1 cup beef broth, for the sauce
2 cups tamarind concentrate, for the sauce

Mix the pineapple, bacon, walnuts, blueberries, apple, celery, onion, almonds, and plantain chips in a bowl. Season with McCormick® salt and pepper. Set aside.
Mix the garlic powder, McCormick® salt and pepper, paprika, and brown sugar in a bowl. Set aside.
Place the loin on a board, season with McCormick® salt and pepper, add the filling over the entire roll, leaving a 3 cm space at the edges of the loin. With your hands, roll the loin and tie with cotton thread.
Sprinkle the seasonings over the stuffed loin. Set aside.
Heat the oil and sear the loin on both sides on a high grill. Set aside.
For the sauce: Heat the oil in a pot over medium heat, add the chipotle peppers, árbol peppers, garlic cloves, and onion, sauté until everything is golden, then pour in the beef broth and tamarind concentrate, cook for 10 minutes. Let cool and set aside.
Blend the ingredients for the tamarind sauce and set aside.
Pour the sauce onto a tray and place the stuffed loin, cover with aluminum foil, and bake at 180 °C for 90 minutes.
Slice the stuffed loin on a board and set aside.
Serve the stuffed loin with tamarind sauce on a large platter, accompany with tamarind sauce and garnish with plantain chips.
