Stuffed Tomatoes with Meat and Rice

A typical Middle Eastern recipe, tomatoes are stuffed with a mixture of rice and ground meat and cooked in a tamarind sauce.

  • 500 grams ground meat
  • 1/6 cups short grain white rice
  • 1 tablespoon baharat
  • 2 tablespoons vegetable oil
  • 1 tablespoon cinnamon powder
  • 1 tablespoon salt
  • 1 tablespoon white pepper
  • 1/2 white onions, finely chopped
  • 1/2 cups pine nuts
  • 12 tomatoes, Remove the filling and seeds.
  • 2 tablespoons vegetable oil
  • 3 tablespoons lime juice
  • 3 tablespoons tamarind concentrate
  • 2 tablespoons sugar

  • Soak the rice in water for 30 minutes. Remove from the water.
  • Mix in a bowl the rice, ground meat, Arabic spice, vegetable oil, cinnamon, pepper, salt, onion, and pine nuts.
  • Preheat the oven to 180 degrees Celsius.
  • Stuff the tomatoes with the ground meat and rice mixture. Place them in a baking dish or a roaster.
  • In a deep bowl, mix the lemon juice, tamarind concentrate, vegetable oil, and sugar. Pour the mixture over the tomatoes.
  • Cover the dish with aluminum foil and bake for 40 minutes. Remove the aluminum foil and bake for 10 more minutes.
  • Remove from the oven and serve.
