1 SuKarne® beef skirt
2 cups basil, for the pesto
1/4 cups pine nuts, for the pesto
3 cloves garlic, for the pesto
1/3 cups Parmesan cheese, for the pesto
1/3 cups olive oil , for the pesto

2 red beefsteak tomatoes

To make the pesto: place all the ingredients in the food processor until it forms a paste.
Place the meat on a board. Cut the edges to form a square.
Hold the meat with one hand and with a filleting knife, butterfly the meat, opening it up to form a rectangle.
Season the meat. Cover with a layer of pesto leaving a 2 cm border. Place a layer of cheese and tomato.
Roll up the meat and place the seam side down.
Pierce the meat with a skewer.
Cut the rolls. Heat a grill and cook the meat on both sides.
