250 grams meat, chopped enchilada
250 grams chorizo
2 bell peppers, chopped
1 white onion , large chopped
250 grams Oaxaca cheese
500 grams deli ham, chopped
salt

Heat the oil in a pan of approximately 30 centimeters.
Once the oil is hot, add the chorizo, the chopped enchilada meat, the chopped onion, and the chopped bell pepper.
Fry well for about 10 minutes and add the ham.
Once all the ingredients are cooked, add salt to taste.
After this, add the crumbled Oaxaca cheese on top of all the ingredients.
Cover and let it sit for approximately 5 minutes until the cheese melts.
Once the cheese is melted, serve in corn tortillas.
