Turkey Enmoladas

If you want to prepare something delicious for your family for the reheating the next day, make these delicious and super easy enmoladas, as the name suggests, fried tortillas filled with reheated turkey, drenched in homemade mole, and served with cream, cheese, onion, and avocado.

  • 6 cups chicken broth, for mole
  • 1 cup mole sauce, in paste
  • 30 grams Mexican chocolate tablet, 1/2 tablet for mole
  • 1 cinnamon stick, for mole
  • 1 pinch salt, for mole
  • 2 tablespoons vegetable oil
  • 3 cups turkey, shredded, from the reheating
  • 3/4 cups chicken broth
  • 1/4 cups vegetable oil
  • 12 tortillas
  • queso fresco, crumbled
  • sour cream
  • white onion, sliced into rings
  • avocado, sliced in a fan shape

  • For the mole, in a small pot, heat the chicken broth, dissolve the mole paste in it, add the table chocolate, cinnamon, and season to your liking with salt. Cook until it thickens. Set aside.
  • Heat a skillet over medium heat with the oil, add the shredded turkey and add chicken broth so it doesn't dry out, cover, and cook until it's very warm. Adjust the seasoning if necessary.
  • Heat a skillet over medium heat with the oil and fry the tortillas, removing excess grease with paper towels. Set aside.
  • On a board, form the enmoladas by filling the tortillas with the turkey. Serve on a plate and cover with the mole. Garnish with cheese, cream, onion rings, and avocado.
