Lay the cutlets on a board, season with salt and pepper, add the dried fruit filling along the length. Wrap the turkey roll and close with hemp string. Mix the white wine, honey, orange juice, and butter in a bowl, set aside. Heat the olive oil in a skillet and fry the rolls on both sides. Add the wine, honey, butter, and juice mixture. Cover and cook for 5 minutes.
Serve the turkey roll with dried fruits on a wide plate and decorate with slices of orange and whole rosemary.
