At Christmas, it is very common for us to enjoy a delicious turkey at the table, so be sure to try this turkey with a tasty combination of cheese and cherries.
The day before, inject the turkey with wine and orange juice.
The next day, boil the thighs, drain them, fry 3 slices of bacon, and in a processor, place the chicken thighs, bacon, ham, and cheese, gradually adding cream to form a smooth but consistent paste.
Chop cherries and add them to the ham mixture.
Stuff the turkey with the mixture, closing it with string and a needle or hooks.
Cover the turkey with butter and place the remaining bacon on top.
Bake at 220°C for 3 hours, basting with melted butter during cooking or covering it with aluminum foil, uncovering it 40 minutes before the end to allow it to brown.
