Turkey with Cherries

At Christmas, it is very common for us to enjoy a delicious turkey at the table, so be sure to try this turkey with a tasty combination of cheese and cherries.

  • 3 kilos turkey, one piece
  • 1 gram white wine
  • 250 milliliters orange juice
  • 200 grams butter
  • 8 slices lean bacon
  • 1 kilo chicken thigh, skinless
  • 500 grams deli ham
  • 300 grams cream cheese
  • 1 liter sour cream
  • 200 grams cherries

  • The day before, inject the turkey with wine and orange juice.
  • The next day, boil the thighs, drain them, fry 3 slices of bacon, and in a processor, place the chicken thighs, bacon, ham, and cheese, gradually adding cream to form a smooth but consistent paste.
  • Chop cherries and add them to the ham mixture.
  • Stuff the turkey with the mixture, closing it with string and a needle or hooks.
  • Cover the turkey with butter and place the remaining bacon on top.
  • Bake at 220°C for 3 hours, basting with melted butter during cooking or covering it with aluminum foil, uncovering it 40 minutes before the end to allow it to brown.
