Easy Turkey Breast

3 kilos bone-in turkey breast
3 cloves garlic, finely chopped
2 teaspoons Dijon mustard
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh dill, chopped
1 teaspoon fresh thyme, chopped
2 tablespoons coarse salt
1 teaspoon pepper, freshly ground
4 tablespoons olive oil
2 tablespoons lime juice
1 1/2 cups white wine
6 blueberries, for garnish

Preheat the oven to 160ºC.
Place the turkey breast on a baking dish.
Mix in a bowl the garlic, mustard, herbs, olive oil, and lemon juice. Season with salt and pepper.
Once the mixture has a pasty consistency, use your fingers to add the herb sauce between the skin and the meat.
Spread all the remaining paste over the skin of the turkey breast (on top).
Add the wine to the dish where the turkey breast is placed.
Place the turkey breast in the oven for 2 hours (it all depends on each oven).
The skin will look golden and it will be cooked inside. If not, cover the turkey with aluminum foil and wait until it is cooked inside.
Remove the turkey from the oven and cover with aluminum foil for 10 minutes.
Slice and serve with the juices released by the turkey breast.
