Glazed Turkey with Plum

  • 1/2 cups plum jam
  • 2 teaspoons chinese five spices, powder
  • 2 tablespoons ground black pepper
  • 2 tablespoons water
  • 1 1/2 teaspoons salt
  • 3 1/2 cups turkey broth, made with the neck
  • 1/2 cups red wine
  • 1/4 cups plum jam
  • 1/3 cups flour
  • 1 sprig celery
  • 1 carrot, chop
  • 1 red onion, chop
  • 1 cup white wine
  • 5 cups water
  • 2 cups chicken bullion
  • 1 leaf bay
  • 1 black peppercorn

  • Boil the jam, Chinese five spice powder, black ground pepper, water, and salt for 3 minutes.
  • Strain and baste the turkey with melted butter every hour, halfway through cooking, baste with the plum glaze, insert a thermometer, and cook until it registers 165 ºC.
  • Brown the neck in oil, add the vegetables until they are browned, add the wine, water, and consommé, and let it simmer uncovered on low heat for 1 hour, strain, and remove the foam.
  • Put the turkey broth in the turkey pot and remove the browned bits.
  • Put the wine and let it reduce, mix the flour with butter and cook with a bit of broth.
  • Then incorporate it into the sauce, add the jam, and let it thicken, strain.
