1/2 bone-in turkey breast, (half turkey)
1 1/2 tablespoons olive oil
1/4 cups onion
2 cloves garlic
pinches thyme
pinches seasoning for poultry
pinches sage
pinches coarse salt
2 tablespoons butter
1/4 cups shallot
1/4 cups onion
salt, to taste
pepper, to taste
1 cup cider

Preheat the oven to 425 F or 210 degrees.
Grease a roasting pan for turkey.
Next, blend ¼ cup of onion, 2 garlic cloves with the herbs in a blender, add 1 tablespoon of oil and rub the turkey breast with this mixture.
Place the turkey breasts in the roasting pan and add one cup of cider, bake for one hour, adding ½ cup of water if necessary.
Add the flour to the onion and shallot, let it sit for a few minutes. Add the cider and let it simmer on low heat. Season with salt and pepper.
