  • 1 turkey breast, opened flat
  • 1 cup goat cheese, for filling
  • 1 cup Gouda cheese, grated, for filling
  • 1 cup pecans, chopped, for filling and for garnish
  • 1 cup dried cranberries, for filling and for garnish

  • 1 pinch pepper
  • 1 cup carrot, chopped, for baking turkey
  • 1 cup leek, chopped, for baking turkey
  • 1 cup celery, chopped, for baking turkey
  • 1 cup thyme, for baking turkey and for garnish
  • 1 cup chicken broth, for baking turkey
  • 2 cups tamarind concentrate, for the sauce
  • 1 clove garlic, for the sauce
  • 1/2 onions, for the sauce
  • 1 dried chipotle chile, for the sauce
  • 1 cup chicken broth, for the sauce
  • 2 tablespoons butter, cut into cubes, for sauce

  • Preheat the oven to 180° C
  • On a cutting board, place the turkey breast opened flat, fill it with goat cheese, gouda cheese, nuts, and cranberries. Season with salt and pepper, roll it up, and use hemp twine to tie it so it retains its shape.
  • Place the turkey breast in a baking dish with the carrot, leek, celery, and thyme, fill with chicken broth, cover with aluminum foil, and bake for 15 minutes.
  • For the sauce, add tamarind concentrate, garlic, onion, chipotle pepper, chicken broth to the blender and blend until you get a smooth sauce. Heat a small pot over medium heat and cook the sauce with the butter, seasoning with salt and pepper.
  • Remove the turkey breast from the oven, add the sauce, and return it to the oven uncovered until cooked, about 15 more minutes.
  • Remove from the oven, slice the turkey breast, and serve on a plate with more sauce, garnishing with nuts, cranberries, and thyme.
