BBQ Turkey

Prepare this original BBQ Turkey recipe, a crispy turkey filled with vegetables, served with traditional BBQ sauce and a glaze made with beer.   • 1 cup butter, for the butter
  • 1 tablespoon fresh rosemary, for the butter
  • 1 tablespoon fresh thyme, for the butter
  • 1 tablespoon sage, fresh, for the butter
  • 2 cloves garlic, for the butter
  • 1 turkey
  • 1 cup BBQ sauce, for the reduction
  • 2 tablespoons honey, for the reduction
  • 1 cup raw sugar, for the reduction
  • 1 tablespoon Tabasco sauce, for the reduction
  • 4 tablespoons Worcestershire sauce, for the reduction
  • 1/2 cups balsamic vinegar, for the reduction
  • 1/4 cups water, for the reduction
  • 1 cup beer, double stout, for the reduction
  • 3 cloves garlic, for the reduction
  • 1/2 onions, for the reduction, finely chopped
  • 1/4 cups mustard, for the reduction
  • 1 teaspoon thyme, powdered, for the reduction
  • 1 cup celery, for the filling
  • 2 apples, for the filling
  • 1/2 cups cranberries, for the filling
  • 1/2 cups onion, for the filling
  • 2 cups bread, golden and cut into cubes, for the filling
  • 1 tablespoon parsley, finely chopped

  • In a saucepan over medium heat, melt the butter and add the rosemary, thyme, sage, garlic, and cook for 5 minutes until you have a flavored butter. Let it cool slightly and set aside.
  • Using a turkey syringe, inject the turkey with the flavored butter. Set aside.
  • For the reduction, cook the BBQ sauce with honey, brown sugar, Tabasco sauce, Worcestershire sauce, balsamic vinegar, water, beer, garlic, onion, mustard, and thyme for about 20 minutes or until it becomes a thick mixture. Let it cool and set aside.
  • On your Victorinox® Allrounder cutting board, peel the apple with your Victorinox® peeler and cut into medium cubes with your Swiss Classic chef's knife.
  • For the filling, in a bowl, mix the celery, apple, cranberries, onion, bread, and parsley. Stuff the turkey and tie it up.
  • Preheat the oven to 180°C.
  • Using a brush, glaze the turkey with the previous reduction and bake for 4 hours or until cooked through.
  • Decorate with parsley, cherries, and orange
  • Using your Victorinox® Swiss Classic carving set, slice the turkey and serve with stuffing.
