The night before preparing the turkey, inject it with white wine.
Preheat the oven to 200°C (400°F). While the oven is heating, place a large saucepan on the stove and heat the oil. Once hot, lightly brown the garlic; when well browned, add the meat and cook until well fried and dry. Then add the pepper, tomato, and other ingredients: olives, capers, raisins, grapes, almonds, and let it season well for about 10 minutes.
Stuff the turkey with the meat mixture you just prepared with all the ingredients. Transfer the turkey to a roasting pan and coat it with the achiote mixed with the white wine.
Place the turkey in the oven and bake for 6 hours, basting it with its own juices every 20 minutes, completing a total of 7 hours. Remove from the oven and it's ready.
