Stuffed Turkey Breast with Grapes

  • 1 turkey breast, opened like a sheet
  • 500 grams grapes, green
  • 200 grams almonds, sliced
  • 1/2 yellow onion, sliced
  • 2 cloves garlic, finely chopped
  • 50 milliliters brandy
  • 20 grams paprika
  • 200 milliliters olive oil
  • 20 grams salt
  • 15 grams ground black pepper

  • Heat the oil in a pan, sauté the garlic, then add the onion, and once it is translucent, add the almonds and grapes. Incorporate the brandy, season, and set aside.
  • Season the turkey breast with salt and pepper, fill it with the sautéed mixture (cold), wrap it, tie it, and set aside.
  • Mix the remaining oil with the paprika, and using a skewer, coat the breast with this preparation. Place the breast on a baking tray.
  • Preheat the oven to 190° C (375° F), cover the breast with aluminum foil and place it in the oven for 35 minutes.
  • Remove the turkey from the oven, uncover it, and check the cooking status of the breast. Remove the string from the turkey, brush with more oil, and return it to the oven for an additional 15 minutes to brown. Once this time has passed, take it out of the oven.
  • Slice and serve.
