Stuffed Turkey with Date and Cranberries

If you don't want to gain weight this Christmas, opt to prepare your favorite dishes in a healthy way, so you won't have anything to worry about. If you don't have the time or desire to cook a whole turkey, choose to use only the breast.

  • 1 turkey, (or a turkey breast) of 3-4 kg already cleaned and hollowed out inside
  • 1 apple, in cubes with skin
  • 50 grams raisins
  • 50 grams blueberries
  • 250 grams dates, finely chopped
  • 6 turkey sausage
  • 1/2 onions, finely chopped
  • salt, to taste
  • 4 pepper blend, to taste

  • Prepare the filling. Instead of finely chopping the ingredients, a food processor can be used, but be careful not to grind too much.
  • While finishing the filling, rub the turkey or breast with olive oil. Once ready, fill it. If cooking a breast, it needs to be flattened, filled, and rolled. Season with salt and pepper.
  • If there is leftover filling, meatballs can be made with it and placed around the turkey on the tray.
  • Bake at 180ºC, basting with its juices every hour. It may need a little chicken broth. For the last half hour, bake uncovered to brown.
  • The baking time depends on various factors, so it should be checked constantly. On average, a 3 kg turkey bakes in 2 hours and a 4 kg one in 4 ½ hours.
