The day before, inject the turkey with wine and orange juice.
The next day, boil the thighs, drain them, fry 3 slices of bacon, and in a processor, combine the chicken thighs, bacon, ham, and cheese, gradually adding cream to form a smooth but consistent paste.
Chop cherries and add them to the ham mixture.
Stuff the turkey with the mixture, and close it with string and needle or hooks.
Cover the turkey with butter and place the rest of the bacon on top.
Bake at 220ºC for 3 hours, basting with melted butter during cooking, or cover it with aluminum foil, uncovering it 40 minutes before finishing to let it brown.
