Turkey and Vegetable Meatballs

  • 500 grams ground duck meat
  • 2 teaspoons onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1/4 cups rice, cooked
  • 1 zucchini, grated Italian cheese or very finely chopped
  • 1 carrot, grated or very finely chopped
  • 1 potato, small grated or very finely chopped
  • 1 tablespoon parsley, chopped
  • 1 egg
  • salt, to season
  • 1/2 cups breadcrumbs, (if necessary)
  • 2 cups tomato sauce, seasoned
  • pepper, to season

  • Mix the meat with the onion, garlic, rice; the vegetables, parsley, and the egg.
  • Season with salt and pepper to taste and knead a little with your hand until you obtain a homogeneous mixture. If the mixture sticks too much to your hands, add a little bread crumbs.
  • Form small balls with the help of a small spoon. Set aside.
  • Heat the tomato sauce and add the meatballs.
  • Cover and cook over medium heat for 20 minutes. Serve.
