Turkey Reheat Baguette

The famous reheating comes after the holiday season, and it's common to gather with family to eat part of the previous day's dinner. If you're out of ideas on how to reinvent the dishes from Christmas dinner, try this delicious chipotle turkey sandwich, which is also very easy to prepare.

  • 1 Italian Lettuce Eva®
  • 3 tablespoons olive oil
  • 2 tablespoons chives, only the stem
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon honey
  • 1 tablespoon white vinegar
  • 3 tablespoons chipotle chile in adobo sauce, ground
  • 2 cups turkey, cooked and reheated, shredded, preferably breast
  • salt
  • pepper
  • 1 baguette
  • mayonnaise, low-fat
  • 1/2 avocados, sliced
  • 1 tomato, in rounds
  • pickled Jalapeño chile

  • Mix the olive oil with the scallions, garlic, honey, lemon juice, white vinegar, and chipotle peppers in a bowl until you get a homogeneous mixture. Add the shredded turkey, season with salt and pepper, and mix until combined.
  • Place the shredded turkey in a skillet over medium heat and cook until golden, stirring occasionally to prevent sticking.
  • Cut the baguette horizontally and place it on a baking sheet. Add a bit of mayonnaise to each half and bake at 180 °C for 6 minutes or until golden brown.
  • Assemble your baguette: Place a layer of Italian Lettuce Eva® leaves to taste, sliced avocado, sliced tomato, and golden turkey. Close and cut in half. Enjoy the turkey reheat baguette accompanied by slices of jalapeño chili.
