  • 2 tablespoons olive oil
  • 1 1/2 cups bacon, in small cubes
  • 3/4 cups onion, finely chopped
  • 2 tablespoons garlic
  • 1/4 cups white wine
  • 3/4 cups celery, sliced
  • 1 turkey breast
  • 3 tablespoons parsley, finely chopped
  • 1 tablespoon dry rosemary
  • 1 tablespoon dried thyme
  • 1/4 cups cranberries

  • Grind the turkey breast in a food processor.
  • Heat the oil in a skillet and sauté the bacon for 3 minutes, then add the onion, garlic, celery, and white wine and cook for 2 minutes or until the wine is reduced by half. Then, add the ground meat, parsley, rosemary, thyme, salt, pepper, and cranberries. Mix and cook for 10 more minutes.
