White Barbacoa from Tabasco

Delicious white barbacoa originating from the markets of Tabasco, easy to make and very economical.

  • 1 kilo skirt steak, in large pieces
  • 200 grams beef brisket fat
  • 5 black peppercorns
  • 5 cloves garlic
  • leaves banana leaf, to cover
  • 1 mallet aromatic herbs
  • cloves salt
  • 2 fingers oregano
  • 4 leaves bay
  • 1 leaf avocado

  • Blend all the ingredients except for the beef brisket fat and the beef flank. Wash the meat and fat, find a tall pot with a lid, and pour them in.
  • Incorporate the blended mixture into the meat and marinate in the refrigerator for 2 hours or more. Adjust salt to taste.
  • After the time is up, remove the fat and set aside; if necessary, add a cup of water and cover with banana leaves.
  • Very important, at the first boil, add the brisket fat and let the meat and fat soften, approximately 1 hour after the first boil.
  • Chop the meat and fat on a board (as the fat adds flavor). Serve immediately.
