1 kilo skirt steak, in large pieces
200 grams beef brisket fat
5 black peppercorns
5 cloves garlic
leaves banana leaf, to cover
1 mallet aromatic herbs
cloves salt
2 fingers oregano
4 leaves bay
1 leaf avocado

Blend all the ingredients except for the beef brisket fat and the beef flank. Wash the meat and fat, find a tall pot with a lid, and pour them in.
Incorporate the blended mixture into the meat and marinate in the refrigerator for 2 hours or more. Adjust salt to taste.
After the time is up, remove the fat and set aside; if necessary, add a cup of water and cover with banana leaves.
Very important, at the first boil, add the brisket fat and let the meat and fat soften, approximately 1 hour after the first boil.
Chop the meat and fat on a board (as the fat adds flavor). Serve immediately.
