  • Melt the butter in a skillet and sauté the onion and garlic for 2 minutes or until golden brown.
  • Add the blue corn and tree chili, the water, and cook for 10-15 minutes or until the kernels are soft. Incorporate the epazote, season with salt and pepper, and cook for 3 more minutes.
  • Serve some blue corn esquites and add lime juice, mayonnaise, cheese, and chili.
