Bacon Medallions and Potato

These bacon and potato medallions are a delicious and very easy option to prepare, as they require few ingredients, but you have all the flavor in one bite.

  • 1 bag Papa Marble McCain®
  • 4 beef medallions
  • salt
  • pepper
  • 4 smoked bacon, sliced
  • 1/4 cups butter
  • 1 tablespoon garlic, finely chopped
  • parsley, finely chopped

  • Season the medallions with salt and pepper.
  • Wrap the medallions all around the edges with sliced bacon.
  • Heat a skillet or griddle over medium heat, add a bit of butter, and seal the medallions on both sides.
  • In the same pan, add more butter, lower the temperature, add the garlic, and cook on low heat, making sure they don't brown or burn.
  • Place the sealed bacon medallions on a baking tray, brush them with butter, add some garlic, and bake at 190 °C until you achieve your desired doneness.
  • Bake the McCain® canica potatoes according to the time indicated on the package.
  • Serve the bacon medallions, placing the McCain® canica potatoes on top of each fillet, brush with a bit of butter, and sprinkle with chopped parsley.
