Chicken Mixiote for Christmas

  • 1 tablespoon European Extra Virgin Olive Oil
  • 1/4 onions
  • 2 cloves garlic
  • 3 tomatoes
  • 2 morita chiles, seedless and hydrated
  • 4 guajillo chiles, seedless and hydrated
  • 1/2 cinnamon sticks
  • 1 teaspoon cumin
  • salt
  • black pepper, whole
  • 1 cup orange juice
  • 1 cup chicken broth
  • 6 chicken drumsticks, without skin
  • 6 chicken thighs, without skin
  • 1 teaspoon European Extra Virgin Olive Oil

  • 2 cups new potatoes, in halves
  • 1 cup baby carrot
  • mashed potatoes, for serving

  • Heat the European Extra Virgin Olive Oil® in a griddle over medium heat. Add the onion, garlic, tomato, and roast for 10 minutes. Set aside.
  • Blend the roasted vegetables, morita chili, guajillo chili, cinnamon, cumin, orange juice, chicken broth, salt, and pepper for 5 minutes. Set aside.
  • Cut squares of wax paper measuring 20 x 20 cm. Place two pieces of chicken, a bit of European Extra Virgin Olive Oil®, the marinade, potatoes, carrots, salt, and pepper.Close the mixiote, wrap it in aluminum foil, and seal each bag very well. Cook the chicken mixiotes in a steamer over medium heat for 40 minutes or until well cooked.
  • Serve the mixiote on a plate, drizzle with European Extra Virgin Olive Oil®, and accompany with mashed potatoes and rice.
