Separate the yolks from the whites. Beat the yolks with the sugar until they double in volume and have a pale color.
Sift the cocoa and add it to the mixture. Beat and set aside.
Beat the egg whites until stiff peaks form and fold into the chocolate mixture.
Place a baking tray with parchment paper and pour the chocolate mixture. Bake at 180 °C for 20 minutes.
For the ganache: add the dark chocolate to the butter and mix until the chocolate is integrated. Incorporate the sugar and vanilla, mix and refrigerate for an hour.
Sprinkle powdered sugar on the parchment paper and flip the sponge cake. Remove the parchment paper and spread a light layer of chocolate sauce. Roll the sponge cake using the parchment paper, making it as tight as possible.
Spread the remaining chocolate sauce over the log and decorate with cherries, mint, and powdered sugar. Don’t forget to serve with a Coca-Cola Zero Sugar!
