  • 4 cups beet, peeled, in small cubes
  • water
  • 2 cups jicama, peeled, in small cubes
  • 1 cup apple, in small cubes
  • 1 cup sugarcane, peeled and in thin strips
  • 1/2 cups unsalted peanuts
  • 2 cups orange juice
  • 1/2 cups mandarin orange juice
  • 1/4 cups lime juice
  • 1 cup sugar
  • 1/2 cups mandarin orange, in segments
  • orange, slice, for decoration

  • Cook the beet in a pot with enough water for 20 minutes. Strain and set aside.
  • In a large bowl, mix the beet, jicama, apple, sugarcane, and peanuts.
  • In another bowl, mix the orange juice, tangerine juice, lemon juice, and sugar.Pour into the bowl with the beet, mix very well, and add the tangerine segments.
  • Serve the Christmas salad and decorate with orange slices.
