Christmas Rice

  • 2 tablespoons vegetable oil
  • 1 clove garlic
  • 1/4 onions
  • 1 cup rice, soaked
  • 1 cup chicken broth
  • 1 cup white wine
  • salt
  • pepper
  • 1/3 cups red bell pepper, in small cubes
  • 1/3 cups green bell pepper, in small cubes
  • 1/3 cups almonds, sliced
  • 1/3 cups dried cranberries
  • 1/3 cups walnuts, finely chopped
  • 1/3 cups bacon, finely chopped, cooked
  • cilantro, finely chopped
  • dried cranberries, for decorating
  • rosemary, for decorating

  • Heat the vegetable oil in a deep skillet, sauté the garlic and onion until they are translucent, then add the rice and cook until it changes color. Then, pour in the chicken broth and white wine, and season with salt and pepper. Mix, cover, and cook the rice for 15 minutes.
  • Once the liquid has evaporated, add the red bell pepper, green bell pepper, almonds, dried cranberries, walnut, bacon, and cilantro. Gently fold in and cook for 5 minutes.
  • Adjust the seasoning and remove from heat.
  • Place the Christmas rice in a baking dish or round mold, cover with cling film, and press down to make it compact. Let it rest for 10 minutes.
  • Unmold the Christmas rice onto a plate and decorate with dried cranberries and rosemary.
