  • 2 cups butter, melted
  • 3/4 cups raw sugar
  • 3 tablespoons orange zest
  • 1 tablespoon dry rosemary

  • 1 cup evaporated milk
  • 1 cup orange juice
  • 1 cup white wine
  • 1 pinch turkey, 6 kg
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups bacon, finely chopped
  • 2 cups ground meat
  • 1 teaspoon celery salt
  • salt and pepper
  • 1 cup sandwich bread, soaked in milk
  • 1/2 cups cranberries
  • 1/2 cups raisins
  • 1/2 cups walnuts, finely chopped
  • 2 tablespoons butter
  • 1/2 cups parsley, finely chopped
  • 1/2 cups cognac
  • lemon, sliced, for decoration

  • Combine the butter, sugar, orange zest, rosemary, salt, pepper, evaporated milk, orange juice, and white wine. Set aside.
  • Inject the turkey with half of the mixture and baste with the other half. Repeat the process 2 more times every 2 hours.
  • Place the Christmas turkey on a tray, cover with aluminum foil, and bake at 180 °C for 5 hours. After 5 hours of cooking, uncover the turkey and baste with the same juice. Bake the turkey for 1 more hour.
  • For the stuffing: melt the butter in a skillet, add the onion, garlic, and bacon, and cook for 5 minutes. When the bacon is golden, add the meat, celery salt, salt, pepper, and bread. Cook for 10 minutes or until the meat is well cooked. Finally, incorporate the dried fruits, butter, parsley, and cognac, and cook for 5 more minutes. Set aside.
  • Serve the Christmas turkey on a tray, decorate with lemon slices, and accompany with stuffing.
