  • 2 tablespoons vegetable oil
  • 1/4 onions
  • 2 cloves garlic
  • 1 cinnamon stick
  • 2 tomatoes, in quarters
  • 6 guajillo chiles, without seeds and veins
  • 2 pasilla chiles, without seeds and veins
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon clove
  • salt and pepper
  • 2 turkey legs
  • 1 cup orange, in slices
  • 1 cup new potatoes
  • orange, in slices, for decoration
  • fresh rosemary, for decoration

  • Heat the oil in a pot over medium heat, add the onion, garlic, cinnamon, chiles, and tomato, and cook for 5 minutes. Then, pour in the chicken broth and cook for 5 more minutes to soften the chiles. Set aside.
  • Blend the onion, garlic, cinnamon, chiles, tomato, broth, cumin, clove, salt, and pepper. Strain and set aside.
  • Place the turkey legs in a baking dish and cover with the sauce. Cover and refrigerate for 1 hour.
  • Add the baby potatoes and cover with aluminum foil. Bake for 1 hour at 180°C, uncover, baste with the same sauce, and bake for 30 more minutes, but baste constantly to keep the meat from drying out.
  • Serve the oven-roasted turkey legs on a tray and garnish with orange and fresh rosemary.
