Traditional Romeritos with Mole and Shrimp

Prepare these romeritos with mole and shrimp for this Christmas season; it is a delicious and very filling dish. Serve the romeritos with bread and celebrate Christmas with the best dishes.

  • 3 tablespoons lard
  • 1/2 cups almonds
  • 1/4 cups peanuts
  • 1/4 cups walnuts
  • 1/4 cups pumpkin seeds
  • 1/4 cups sesame seeds
  • 1 cinnamon stick
  • 5 cloves
  • 1 tablespoon allspice berry
  • 1/2 teaspoons cumin
  • 5 cloves garlic
  • 1/4 onions, in pieces
  • 5 guajillo chiles
  • 5 pasilla chiles
  • 7 ancho chiles
  • 2 tomatoes
  • 1 cup dried shrimp
  • 4 cups shrimp broth
  • salt
  • 3 tablespoons lard, for frying
  • 1 cup Mexican chocolate
  • 2 cups shrimp
  • salt

  • 4 cups romeritos
  • 1 cup new potatoes, cooked and chopped
  • 1 cup nopal, cooked and chopped
  • bread, for accompaniment

  • For the mole: Add the lard, almonds, peanuts, walnuts, pumpkin seeds, sesame seeds, cinnamon, cloves, allspice, cumin, garlic, onion, chiles, tomato, and dried shrimp in a saucepan, then pour in the shrimp broth and cook for 10 minutes. Let cool and set aside.
  • Blend the mixture and fry in a saucepan with a little lard, then add the table chocolate and cook for 30 more minutes without stopping to stir.
  • Cook the romeritos in a pot with water over medium heat for 10 minutes. Drain and add the romeritos to the mole along with the shrimp, potatoes, and nopales.
  • Serve the romeritos with mole and shrimp and accompany with bread. Enjoy.
