For the mole: Add the lard, almonds, peanuts, walnuts, pumpkin seeds, sesame seeds, cinnamon, cloves, allspice, cumin, garlic, onion, chiles, tomato, and dried shrimp in a saucepan, then pour in the shrimp broth and cook for 10 minutes. Let cool and set aside.
Blend the mixture and fry in a saucepan with a little lard, then add the table chocolate and cook for 30 more minutes without stopping to stir.
Cook the romeritos in a pot with water over medium heat for 10 minutes. Drain and add the romeritos to the mole along with the shrimp, potatoes, and nopales.
