Turkey Puff Pastry with Spinach and Ricotta

  • 2 cups Bionda® cottage cheese, for the filling
  • 1 cup bacon, diced and fried, for the filling
  • 1 teaspoon garlic powder, for the filling
  • 1 teaspoon onion powder, for the filling
  • 2 tablespoons chives, finely chopped, for the filling

  • 4 turkey milanesas, 1.8 kg
  • 1 cup spinach, cleaned and stemmed

  • Place Bionda® Ricotta, fried bacon, garlic powder, onion powder, chives, salt, and pepper in a bowl. Mix with a spoon and set aside.
  • On a board with cling film, lay out the fillets, bringing all corners together. Add the ricotta and spread with a spoon until fully covered, then add the spinach. Roll tightly using the cling film until you obtain a firm and compact roll. Set aside.
  • On a floured surface, roll out the puff pastry with a rolling pin until you achieve a thickness of 5 mm. Place the turkey roll on top and wrap until covered. Place the turkey puff pastry on a baking tray and freeze for 15 minutes.
  • Using a knife, score lines along the turkey puff pastry. Glaze with egg yolk and bake at 180 °C for 1 hour. Let it rest for 10 minutes before slicing.
  • Slice the turkey puff pastry with spinach and ricotta, present it on a platter and serve with salad.
