Try this recipe for eggs in a casserole with chorizo, as we enhance its flavor thanks to the delicious Del Fuerte® Spiced Tomatoes, which give an exquisite touch to the sauce, in addition to making the procedure easier and faster.
1 1/2 cups Del Fuerte® Spiced Tomatoes, presentation of 345 g
salt
pepper
3 eggs
1/4 cups Cotija cheese, fallen apart
parsley, finely chopped, to decorate
bread, in slices, to accompany

Heat the olive oil in a cast iron pan over medium heat and cook the chorizo for 8 minutes or until golden brown.
Add the green bell pepper and cook for 2 minutes. Later, bathe the ingredients with the Del Fuerte® Spiced Tomatoes, cook for 5 more minutes and season with salt and pepper.
Add the three eggs to the pan, on top of the sauce, very carefully and without breaking them. Cover and cook the eggs in the pan for 5 minutes. Sprinkle with Cotija cheese and parsley.
Serve the eggs in the casserole with chorizo in the same pan and accompany with sliced bread.
