Boil 2 1/2 cm of water in a pot. Place the plums in an adjustable steaming basket, cover the pot, and let them steam for about 3 minutes, depending on their ripeness, until they soften but do not break apart.
Mash the plums with a fork. Discard the skins and pits. Let cool.
Blend in a food processor until you obtain a smooth puree. You won’t need to add additional liquid.
Sweeten with honey to your baby's taste and set aside.
Add the amaranth with just enough water to cover it. Close the Express Pressure Cooker® and place the pressure regulator on it, then put it on the stove over high heat; when steam starts to come out, reduce the heat to medium and cook for 10 minutes.
Remove the Express Pressure Cooker® from the heat, let it cool, remove the pressure regulator, open the Express Pressure Cooker®, and you're done!
The amaranth will be translucent, thick, and sticky. Mix 1/4 or 1/2 cup of the plum puree with the amaranth and reserve the leftover for another use.
