Marshmallows or Candy

This is a super easy recipe to create Marshmallows, marshmallow candy, Clouds, or whatever you want to call them, ideal for children's parties, quinceañeras, weddings, and more. It's a very simple recipe to prepare, perfect for cooking with your kids.

  • 400 grams sugar
  • 20 grams natural unflavored gelatin
  • 1 teaspoon pecan essence, or your favorite essence
  • 250 milliliters water
  • cornstarch, necessary amount

  • Soak the gelatin in half of the water for about 5 minutes.
  • With the rest of the water, make a syrup by placing the 400 grams of sugar in a pot with the essence of your choice, over medium heat, stirring constantly until a syrup is obtained.
  • Once the syrup is smooth, remove it from the heat, incorporate the hydrated gelatin, and bring it back to medium heat for about 2 minutes.
  • Then transfer the mixture to a bowl and let it rest for about 5 minutes.
  • While the mixture is cooling, sprinkle a surface (a plate, silicone mold of shapes, or countertop) with powdered sugar or cornstarch. If you choose a shape mold, you need to completely cover the mold to prevent sticking.
  • After 5 minutes, beat with a mixer at maximum speed for about 10 to 15 minutes, obtaining a meringue.
  • Once ready, place the mixture in a piping bag and form lines (in my case) on a flat plate previously sprinkled with powdered sugar or cornstarch, then sprinkle again on top until covered. Let it rest at room temperature for 4 hours. Cut to your preferred size.
