In a bowl, mix the Greek yogurt, eggs, plant-based milk, vanilla extract, oat flour, wheat flour, brown sugar, salt, and cinnamon until well combined. Then, fold in the apple cubes.
Melt a bit of butter in a skillet over medium heat, pour a portion of the pancake batter, add the apple, and pour a bit more batter on top. Cook the pancakes for 3 minutes on each side or until well cooked.
