Preheat the oven to 180°C.
Beat the butter (room temperature) with the sugar until creamy.
Then add the eggs one by one.
Then sift the flour with the cornstarch and add it.
Add the vanilla.
Next, place the cupcake liners in the mini cupcake tray, and fill the liners just over halfway with the mixture.
Bake for about 15 minutes; if you want to check, just insert a toothpick, and if it comes out clean, they are ready.
Once they are ready, let them rest while we make the meringue.
In a small pot, place the cup of sugar and water, and bring to a boil until it forms a medium or soft ball syrup.
While the syrup is cooking, place the egg whites in a bowl and beat with an electric mixer until stiff peaks form.
When the syrup is at the right point, pour it into the bowl with the beaten egg whites in a steady stream and slowly, but do not stop beating at any moment.
Put the meringue in a piping bag and decorate them as you like. And there you have your delicious mini cupcakes.
