Vanilla Mini Cupcake

These mini cupcakes will be delicious. Everyone will love them, from the little ones at home to the adults... you can use them for special events like: baby showers, graduations, in short, they will be perfect wherever you put them.

  • 150 grams unsalted butter
  • 1 cup sugar
  • 2 cups self-rising flour
  • 1/2 cups cornstarch
  • 3 eggs
  • 1 tablespoon liquid vanilla
  • 4 egg whites, for the meringue
  • 1 cup sugar
  • 1/2 cups water, or the sufficient amount to barely cover the sugar.

  • Preheat the oven to 180°C.
  • Beat the butter (room temperature) with the sugar until creamy.
  • Then add the eggs one by one.
  • Then sift the flour with the cornstarch and add it.
  • Add the vanilla.
  • Next, place the cupcake liners in the mini cupcake tray, and fill the liners just over halfway with the mixture.
  • Bake for about 15 minutes; if you want to check, just insert a toothpick, and if it comes out clean, they are ready.
  • Once they are ready, let them rest while we make the meringue.
  • In a small pot, place the cup of sugar and water, and bring to a boil until it forms a medium or soft ball syrup.
  • While the syrup is cooking, place the egg whites in a bowl and beat with an electric mixer until stiff peaks form.
  • When the syrup is at the right point, pour it into the bowl with the beaten egg whites in a steady stream and slowly, but do not stop beating at any moment.
  • Put the meringue in a piping bag and decorate them as you like. And there you have your delicious mini cupcakes.
