Watermelon Cupcakes

  • 4 1/2 cups flour
  • 2 1/4 tablespoons baking powder
  • 1 1/4 tablespoons salt
  • 2 1/4 sticks unsalted butter, at room temperature
  • 6 eggs
  • 1 tablespoon vanilla essence
  • 1 1/4 cups cow's milk
  • 1 package cream cheese, for the frosting
  • 1/2 cups unsalted butter, for the frosting
  • 1 cup icing sugar, for the frosting
  • 1 tablespoon vanilla essence, for the frosting
  • red food coloring
  • green food coloring, for the frosting
  • 250 grams chocolate chips

  • Preheat the oven to 180ºC. Prepare the cupcake trays with the liners.
  • Mix the flour, baking powder, and salt.
  • In an electric mixer, beat the butter and sugar until fluffy. Add the eggs and vanilla and mix well.
  • Add the flour mixture and milk and beat until you have a smooth batter. Then add one or two drops of artificial red food coloring and mix well.
  • Add the chocolate chips to the mixture.
  • Pour the batter into the cupcake liners and bake for 20 minutes. Remove from the oven and let cool.
  • While the cupcakes are baking, prepare the frosting by beating the cream cheese, powdered sugar, butter, and vanilla extract in an electric mixer.
  • Add 1 drop of green food coloring to the frosting and finish mixing.
  • Once the cupcakes and frosting are ready, decorate the cupcakes with the frosting and sprinkle chocolate chips on top.
