Make these incredible and delicious ABC cookies for your kids for back to school. They are made with butter with a slight almond flavor and are decorated with royal icing; colorful and sure to be loved.
Cream the butter with the sugar in the mixer. Add the egg yolks one by one while mixing until fully incorporated.
Add the vanilla and almond extracts, the flour, and the salt. Mix until a homogeneous dough is obtained.
Wrap the dough in cling film and refrigerate for 15 minutes. Roll out on a floured surface with a rolling pin and cut with letter-shaped cutters.
Bake for about 15 minutes or until the edges are golden. Cool.
For the royal icing, beat the egg white with the lemon juice until it reaches a meringue consistency. Gradually add the sugar until fully incorporated.
Separate the royal icing into different containers and color with food coloring. Decorate the cookies to your liking and let them dry between layers.
