Alfajores with Lemon Zest

  • 1 1/2 cups wheat flour
  • 2 1/2 cups Maizena® cornstarch
  • 1/2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 200 grams Primavera® Cook Without Salt margarine
  • 3/4 cups sugar
  • 3 egg yolks
  • 1 teaspoon vanilla essence
  • 1 tablespoon lime zest
  • 1 1/2 cups cajeta

  • Sift the flour with Maizena® Cornstarch, baking soda, and baking powder. Set aside.
  • Beat Margarina Primavera® Cocina with sugar until creamy, add the egg yolks gradually and beat until incorporated.
  • Add the vanilla and lemon zest; mix until incorporated.
  • Gradually add the mixture of dry ingredients and beat until integrated.
  • Roll out the dough on a floured table and cut cookies approximately 8 cm in diameter.
  • Place them on a previously greased baking sheet and bake at 170 °C for 15 minutes or until lightly golden.
  • Once cooled, form the alfajores by joining two with a bit of cajeta in the middle.
  • Serve.
