In a bowl, mix the flour, cornstarch, baking powder, and salt.
In another bowl, using an electric mixer, beat the sugar and eggs for 3-4 minutes. Add the orange zest and flour and continue mixing. Add the almonds.
Divide the dough into two equal mounds and place them on the baking sheet.
Grease your hands with butter or water and shape the dough into two loaves approximately 20 x 6 cm.
Bake the loaves for 35 minutes or until lightly golden, then remove from the oven. Allow to cool for 5 minutes.
Using a bread knife, cut pieces into biscotti shapes and place on the baking sheet. Bake for 25 minutes or until golden. Remove from the oven and allow to cool.
Melt the chocolate in a double boiler until fully melted.
Dip each biscotti in the chocolate and place on a rack over a baking sheet, allowing the chocolate to harden.
